Beef and Broccoli
Ingredients
* 5 tbsp neutral oil
* 3 cloves garlic(minced)
* 1 tsp ginger(minced)
* 1 head broccoli
* 2 tbsp Shaoxing wine
* Sesame seeds
* 1.5 tbsp cornstarch+3 tbsp water
Beef+Marinade
* 1 lbs beef flank(thinly sliced against the grain)
* 1/4 tsp baking soda
* 3 tbsp Shaoxing wine
* 1 tsp light soy sauce
* 1 tsp oyster sauce
* 1/2 tsp salt
* 1/2 tsp sugar
* 1 tbsp cornstarch
* 1 tbsp neutral oil
Sauce
* 1/3 cup beef broth
* 1.5 tbsp light soy sauce
* 1 tsp dark soy sauce
* 1 tbsp oyster sauce
* 1 tsp sesame oil
* 1 tbsp sugar
* 1/4 tsp white pepper
Instructions
1. Thinly slice beef and marinate with ingredients.
2. While marinating, combine sauce ingredients, mince ginger and garlic, and prep broccoli by cutting it off the stem and blanching in salted boiling water for 45 seconds.
3. Add 3 tbsp of oil to a ripping hot wok and fry beef in a single layer. Wait 1-2 minutes before stirring so it gets a nice sear. Fry beef for a total of 3-4 minutes.
4. Set beef aside and add more oil to the wok. Sauté garlic and ginger for a few seconds and deglaze with Shaoxing wine.
5. Add beef and broccoli to the wok along with the sauce and stir fry for a few minutes.
6. Combine cornstarch+water and add slurry to the wok.
7. Stir until thickened, garnish with sesame seeds, and serve with hot rice.
