Ingredients:
The Scottish Bee Company Heather Honey
2 Chicken Breasts
Paprika
Oregano
Chilli Flakes
Spinach
Lemon
Yoghurt
Lettuce
Cucumber
Pitta Breads
Halloumi
Salt & Pepper
Oil

Method:
Pat the chicken dry and carefully slice in half. Drizzle with a small amount of oil before seasoning with salt, pepper, paprika, oregano and chilli flakes. Set aside.
Make the dressing for the salad by blending together a handful of spinach, a squeeze of lemon, salt and 2 tbsp yoghurt.
Slice the lettuce, cucumber and halloumi.
Add a small amount of oil to a frying pan over a high heat. Fry the chicken in the pan for about 5 minutes until nicely coloured and cooked through. Rest the chicken and then fry the halloumi in the same pan.
Lightly warm the pitta breads in the toaster.
Add the lettuce, cucumber and another handful of spinach to a large bowl before mixing in the dressing.
Slice the chicken and drizzle with honey.
Assemble the pitta breads and serve with more salad on the side.
