what is that sound between 2:55 and 3:05 this stuttering noise. Is he only giving it half throttle? Or is the carburetor not getting enough fuel or something? Please lmk what this sound is

It's terrible to hear that the copy PWK carburetor is not set at 2/4 and 3/4 throttle, very rich in the needle range...
