I’ve never used spectralock.
I use mapei ultracolor fa grouts. It’s sold as a fast setting grout.
In reality it sets fast on porous ceramic and slow on porcelain.
I tried to apply it “by the rules”, which is waiting for the grout to set 20 minutes.
On unrectified ceramic, 20 minutes is way too much and it’s impossible to clean and joints are overfilled. An 1/8 grout line becomes an inconsistent 3/16 to 1/4 grout line which is terrible.
So now I apply and do my initial cleaning right away with a light hand.
On rectified tile, I still do it by the rules, because I want the joints to be 95-100% full. And I don’t have to reach into the joints to remove any grout. I just keep the sponge flat and that makes cleaning easier.
Bottom line is: unrectified tile clean right away. Rectified tile, let the grout set until it’s not sticky when touching it with a finger.
Hope this helps someone;)

We have been using grout for thousands of years also the stuff comes around pre-mixed remember never wipe your joints with a straight line always use the sponge for the squeegee on an angle to stop removing the grout from the joint especially on vertical walls with gravity is working against you

I’ve been meaning to ask you.. is it best to always purple rock the whole bathroom? I cant find much information about code requirements on that.
