Ube Butter Mochi plus BONUS dessert idea!

An easy and fun recipe to enjoy with your friends and family! It's delicious! It's buttery and it's totally shareable! Another idea for your next get together with your family and friends.
You will need for an 8x11 pan
- 1 box of Mochiko Sweet Rice Flour (16oz)
- 4 eggs
- 1 can of Coconut Cream
- 2 cups of Evaporated Milk
- 1/2 a cup melted Salted Sweet Cream Butter
- 2 cups of sugar
- 1 tbsp of Ube Extract
- 2 tsp of Baking Powder (Used double active in this video)
- 1 tsp of Sea Salt (or regular)
- 1/2 a cup of Ube Jam
- 1/2 a cup of Shredded Coconut (Sweeten or Unsweetened)
Mix ingredients well with a spatula or a whisk. Don't forget to butter your baking pan. Bake at 350 degrees for about 45 minutes to an hour. You will know it's done when it gets that nice brown crust on top. If you're making it in small round baking pans, keep an eye on it between 40 minutes to an hour. Baking rack should be centered in your oven.
I mentioned the Trader Joe's Ube Pancake mix that was seasonal and this might be a great alternative for a waffle style or pancake to do at home.
