I just replaced my vita mix, about 33 years old! She was still working but the jar got cracked 😢 so I got a new one that is shorter 🎉to fit under the cabinets. You’re right vita mix is the best!!!

You could definitely buy one of those storage bins meant to be outside and put most of your plant supplies in it. It's an eyesore outside but it would give you so much more space.

Just a soft suggestion- one of those over the toilet storage shelves might come in handy! I personally see them secondhand on Fb marketplace all the time.

Have you tried the microwave where the vitamix is? I bet you could still fit the knife block or the vitamix and cutting boards on top of microwave.

Your knives would be great on a magnetic knife block on the wall to get more off the counter.

You could do bins by your front door under the left trestle of your desk that face open towards your shoe rack for concealed entry storage.

Have you seen the vertical metal "invisible" bookshelves? Great for a small apace and to build visual height. Coudl fit lots of places in your apartment!

Oh and maybe some kind of outdoor storage bench might be a good solution for all your currently not in use pots?
