I think part of the reason Sans fights have become so insanely hard is because it’s the same attacks over and over again. I’m gonna bet that if there was a new game about Muffet or something it wouldn’t have to be FDY tier difficult.

You need to see the Sans fight in "Spamton Goes to Driving School." It's actually really well balanced, and uses unique mechanics that make you re-examine your general strategy.

People usually forget how Sans works.

1 - Karmatic Retribution; Sans literally NEEDS you to kill the entire Underground. Otherwise, his attacks WILL deal one HP with none of that purple. This isn't a canonically explained explanation, but it's the only one that makes sense for why Sans wouldn't jump you shortly after the Ruins since he knew you'd already killed people. Plus, this is hinted, btw.

2 - He understands nothing matters, and that's why he doesn't try, because what is the point? Yes, Papyrus is obviously one of the few things that keeps himself going and is probably one of the key reasons why he attempts to kill you. Since y'know. He literally is chill with you even if you kill Undyne and Mettaton. Although he does show concern for Toriel, btw. And he does judge you, but overall...? but it's obvious he doesn't care and is happy with Papyrus at the very least being alive and hell he even tries to make him happier.

3 - In the genocide route, he is BIDING time. He's clearly waiting for Asgore to absorb the human souls. That's what he is warning you about as he wouldn't have any knowledge on the Chara we meet. Plus, he understands you're going to erase all time and space, so he decides it's now or never because not even he can remember past this point, btw, so if he can hold you off a little longer just MAYBE Asgore can stop you and that's probably why he fights you in all honesty because Asgore COULD break the cycle.

4 - Sans trying his hardest wouldn't be that different... It's sadly true that even if Sans tries his ABSOLUTE hardest, nothing would change as at the end of the day, you can learn his attacks, Sans knows that you learn from his actions, hence from his opening response change. So Sans has no reason to try his hardest as he'd just get tired quicker for no gain other than... what? Bate you for a couple more turns and then die quicker on the turn he can remember clearly.

5 - His HP literally won't change unless he begins to murder people. We don't know how monsters HP and LVS grow, but it probably levels up the same as humans, or they might gain some in a similar manner to Deltarune. So unless Sans begins killing people (Dusttale be like). He isn't going to change from 1 HP and 1 DEF. You could argue that if he had armour, he could increase his DEF, but that's pretty much all for Sans, and it wouldn't do much up against your insane attack. That's why Sans has dodging. Tbh Sans would probably need to chug a monster, which would solve a lot of issues. Then

6 - "Mercy Killing" - Basically, if a monster spares you, you can kill them immediately. When you spare Sans, he can kill you immediately too. Remember, monsters and humans abide by the same rules pretty much. So Sans cannot suddenly kill you without this rule as he's not able to. As it would break the established rules which not even Sans breaks.

That's pretty much it, but the main factor is... What is the POINT? Sans knows you can learn his moves as stated above. You got past Undyne, who is WAAAAY stronger than him on paper, so what can he do? His situation is basically hopeless. I'll leave you with that.
