Tim maybe piano hinges that are stiffer would have worked to help keep the doors closed.

Use some washers as spacers and put them on the bottom hanging screws. That should give it a slightly upward tilt which should allow the doors to lay close

adjust the angle so it doesnt hang plumb. bump out the bottom hinges. it'll self close

Make sure it's level seems like doors want to move forward

How did you trim the edges of cabinet to be able to attach the doors?

How did you mount this into the brick? Struggling to wrap my head around it.

Like the cabinet and like the design. I am getting ready to build one for mine but mine will be in the outside elements and will need to be more weather tight and resistant. As for the doors, I think you were correct in your outer hinges might have to much on them and they are binding like you said. I would readjust those and use magnetic pins to hold the close.
