You will need 200gr of large green lentils. Pre-boil them by placing them in a pot of cold water and bringing to a boil. Strain them and set aside. Chop one onion and 2-3 cloves of garlic. Shallow fry in 3 soup spoons of olive oil till golden and add the lentils. Also add 70g of tomato puree, 3 soup spoons of wine vinegar and a couple of bay leaves. Fill the pot 2/3 with water and boil over low heat for 1 hour. Add a tea spoon or oregano and 1 of salt. Boil for another hour till the soup thickens. At this stage you may want to add some more vinegar and salt to make the soup a bit spicier. If you enjoyed the recipe, share it with a friend.
