Today you can join me getting ready for our Minimalist Scandi Easter with Baking Easter Muffins and a shopping trip to Gothenburg, Sweden's second largest city. We visit interior design shops, have lunch at a seafood restaurant and drink the best coffee in town.
Back home, I unpack what I bought and I start decorating the black house for Easter.
I bring in lilac sprigs from the garden which I decorate with Easter eggs in Swedish and Danish design. I also bake the world's cutest Easter muffins, which I promise will be a hit on the Easter table.

In this recipe, I bake gluten and sugar-free muffins, but if you prefer "regular" muffins, it works just as well.
I start by whisking the eggs really fluffy.
Then I mix all the dry ingredients and stir well.
Stir the eggs into the dry ingredients and then add the other ingredients.
Mix thoroughly.
I spoon the batter into muffin tins, the recipe makes about 10 muffins.
I let the muffins cool before adding the frosting.
I make the frosting from Philadelphia cheese and vanilla curd which I whip together.
I put the frosting on the muffins and sprinkle coconut flakes that I dyed yellow with caramel coloring.
Add black sprinkles for eyes and an orange or red Smarties for a beak.
I usually freeze the muffins and decorate them when I'm going to serve them.

CARROT MUFFINS Á LA EASTER CHICKEN
4 eggs
80 g finely grated carrot
3 dl gluten-free oat flour (alternatively almond flour)
1 dl protein powder vanilla (I have vegan)
100 g melted butter
4 tbsp po fiber
4 tablespoons sweet sprinkles or other sugar substitute
2 teaspoons baking powder
1 tbsp ground cinnamon
Barely 1 tablespoon ground cardamom
4 krm ground ginger
1 mashed banana
FROSTING
200 g Philadelphia cheese
½ dl - 1 dl vanilla curd. Add a little at a time, the frosting must not be too loose.
Coconut flakes
Yellow caramel color
Black sprinkles
Smarties
THIS IS HOW I DO IT
MUFFINS
Set the oven to 175 degrees
Beat the eggs until fluffy
Mix all dry ingredients well
Stir in the eggs and stir well
Add the butter, carrot and banana and stir.
Divide the batter into muffin tins
Bake in the middle of the oven for about 18-20 minutes depending on the oven temperature
FROSTING
Whisk together Philadelphia cheese together with vanilla curd
Top the muffins with the frosting.
Mix coconut flakes with yellow caramel coloring
Sprinkle the coconut flakes over the frosting
Decorate with "eyes and beak"
