The perfect make-ahead solution to busy mornings = Ham and Cheese Egg Cups! These tasty bites are the best protein-packed grab-and-go breakfast option. Make them on Sunday, and they will last all week!
Recipe:
Ingredients
- 12 Eggs
- 1 1/2 C Diced Ham
- 1/3 C Milk
- 1 t Salt
- 1 t Pepper
- 1 C Shredded Cheddar Cheese
- 1/2 C Diced Onions
- 1/2 C Diced Sweet Peppers
*Makes 12 Cups
Steps
1. Preheat oven to 400 degrees.
2. Whisk together eggs, milk, salt and pepper.
3. Dice ham, onions and peppers. Evenly distribute between 12 muffin cups. Pour egg mixture on top.
4. Top with cheese.
5. Bake for 12 - 15 minutes or until eggs are fully set.
