You never cut the core out!
The core has a high concentration of bromelain. The core is delicious and should be eaten as well.

cut them into strips and put them in a jar with coconut juice, store them in the fridge for a refreshing snack.

You can also twist the top of the pineapple off so that you're not wasting as much of the pineapple.
