Voskos Bites: Spinach Artichoke Dip

Ingredients:

8 oz. frozen spinach, thawed and chopped

8 oz. artichoke chopped, can

1 cup plain non-fat Voskos Greek yogurt

½ cup parmesan cheese, reserve some for the topping

2 tbs. chopped scallions

Salt and pepper to taste

Panko bread crumbs

Olive oil

Directions:

Pre-heat oven to 400*. In a mixing bowl combine spinach, artichoke, parmesan cheese, scallions, salt and pepper and plain non-fat Voskos Greek yogurt. Pour into a baking dish, add the reserved parmesan cheese, sprinkle panko bread crumbs on top and drizzle with olive oil. Bake uncovered for 20-30 minutes until the cheese is bubbly and the bread crumbs are golden brown. Serve with crackers and/or vegetables, such as cucumber slices, carrot sticks or celery sticks.
