Being from Sri Lanka and having a cinnamon cultivation of our own, I still can't help but save the cinnamon for another use. It seems such a waste when it still smells fine. Was happy to see it wasn't just me who did that! I do the same with star anise, cardamom and sometimes peppercorns too! Thank you for sharing.

I'm Sicilian, thanks for showcasing one of our desserts! Biancomangiare is a quick and easy alternative to pudding or custard, you can eat it chilled or even hot straight away. You can use alternative thickeners and sweeteners like agar/gelatine and stevia to fit it into a high protein/low calorie or low carb diet and you can enjoy it in any season (though it's usually eaten in the summer).

I really appreciate the tip to reuse the cinnamon stick!
I had no idea, although I always thought it to be wasteful to throw them away after one use.

In Algeria, we have a similar dessert called Palouza made with milk, sugar, cornstarch, crushed almonds, and blossom water. You can make a vegan version by replacing the milk with water.

In the Philippines, we have something with a similar consistency called "maja blanca" but it uses coconut milk instead and it's often added with sweet corn.

This recipe dates back to the middle ages and was served in royal courts. It is also known in French cuisine a Blanc manger. It was one of the most difficult things to make, because it had to be totally as white as fresh snow. Cooking it over fire it was always in danger of burning, caramelizing or getting ash and smoke into it which would make it grey or brownish in color.

It’s very similar to a dessert from the French Caribbean called blanc manger coco. It’s made with coconut milk instead of almond, but « blanc manger » literally translates to « bianco mangiare »!

We have a similar dessert where I live called tembleque. Its made the same way, but with coconut milk instead of almond, since it's a tropical island.
