I've been eating sautéed/caramelized zucchini over spaghetti with A generous sprinkling of pecorino Romano over all for decades. So many people don't know how delicious zucchini is because they eat it boiled and aren't fond of that, but once it's caramelized, and that delicious dark and sweet oil The brown zucchini gives off in the pan is used as the dressing for the spaghetti, my goodness. There's no flavor like that in the world. It's one of my favorite dishes, and it doesn't even need meat although you can throw whatever you like in with it. This way done here is a different style all together, but it's just really hard to imagine just how delicious that flavor is until you actually taste all of those ingredients we put into it, which are the same. It's incredible, just incredible.
