Get the fighters to weigh in on fight night like they do in Glory, and have your replacement fighter ready in case one fighter is enough of a moron to walk into the octagon severely dehydrated. They do this at the Olympics too. Tradition is the only excuse not to. Weight-cutting capability should not be a factor in determining who is a better fighter.
