Recipe for Little Millet Chapathi
Ingredients:
Little millet flour - 1 cup
Water - 1 cup
Oil it ghee - 1 tsp

Take fresh millet flour for best results.

Take a cup of water in a thick bottom pan. Add a tblsp of little millet flour( you can use corn flour or rice flour or whole wheat flour or maida also) required salt, a tsp of oil or ghee ( optional) and cook into a porridge. Now add the rest of the little millet flour. Mix well and when all the water is absorbed switch off immediately.

Use a flat bottom vessel or a pestle and pound it for a few minutes until everything is well combined and smooth. When it is lukewarm, knead to a smooth nonsticky dough. You can add water if it is too dry. The dough should not have any cracks. It should be smooth and non sticky.

Now take a small portion of the dough, roll into a smooth ball, flatten and roll into a medium thick chapathi. Sprinkle little millet flour or corn flour to roll it.

Place the chapathi on a hot pan and apply few drops of water on top to prevent drying. This will also make the chapathi soft. Flip after the water dries completely. Cook till you see small bubbles. Press the edges with a wooden press or a thick cotton cloth until it starts to puff up. Tasty and soft little millet chapathi is ready.
You can add a tsp of ghee on the chapathi. ( It is optional)
You can prepare this without adding any oil or ghee.

Keep the dough covered with a damp cloth to prevent drying. With time the dough tends to be dry. Add a few drops of water, knead and then prepare chapathi as usual.
You can substitute little millet flour with any millet flour like ragi or fingermillet, kodo millet, barnyard millet, foxtail millet, proso millet, pearl millet and prepare chapathis.

You can add some Urad dal flour for soft Binding consistency.. My Mom Usually Does that to all small millet flours for Chapati/Roti

mine was so sticky even adding more dough it was impossible to make it a tortilla with it sticking everywhere
