i've always used fresh boiling for white. except when there's a lot of buds(or all buds), that just makes bitter death

You hit it right on the money brother. Have to start the leaves out with a boil. I do reboil on steep 4 or 5 depending upon how long between steeps. I find I can really push white tea and feel the benefits when I do. Certain catechins only release at certain temperatures up to boiling. Some teaheads always boil probably indirectly for that reason.

Awesome. I’m glad you got there. I’ve noticed I need absolutely boiling hot water if I want this one to deliver the depth of sweetness (and the impeccable balance) I’m looking for, especially in later steeps. But boy does it deliver! And it keeps on delivering for steep after steep after steep. 😋

I prefer a regular kettle. If I need that boiling hot jam I have it and if I need cooler I can just wait and do the "hand over the water" thing. That reminds me, it's time for some fire red tea from Taiwan.
