Anakin had wore the light Jedi robes before, he was wearing them at the end of The Phantom Menace

Plus, the dark robes he wore in his life symbolically represented the darkness within Anakin and his closeness with the Dark Side. Tbh it's kind of awesome that the traditional Jedi robes chose him in his afterlife in the Force.

At first I haven’t noticed Anakin’s new robes. But I’m glad that he is back, and now on the light side again. I guess the traditional Jedi robs have a meaning, since they have white & brown it symbolizes pure. Or at least that’s what I think since it doesn’t say on the internet, still it’s nice that he is wearing those robs.

I never read too much into it. I always assumed Anakin could have worn traditional Jedi robes at some points in his life, we just never see it on-screen because from a cinematic point of view the darker robes represent his descent to the dark side. But off-screen maybe he did wear those robes from time to time.
