You definitely can if you want. Some people do, some don't. If you plan to plug the u=x-2 back in then there is no need BUT if you would rather not plug it back in, you can switch the x values to u values. Example x=2 would be plugged into u=x-2=2-2=0 and x = 3 would be plugged into u=x-2=3-2=1.
