Bone Marrow Aioli:
2 egg yolks
1/2 teaspoon dry mustard
1/2 teaspoon Kosher salt
Juice of ½ a lemon
2 teaspoons garlic paste or 2 garlic cloves minced
1 tablespoon roasted bone marrow
2/3 cup extra virgin olive oil or avocado oil
INSTRUCTIONS
* Combine the egg yolks, dry mustard, salt, and lemon juice in a food processor or blender and process for 20 seconds.
* With the food processor or blender running, slowly drizzle in the oil in a thin stream. It should take about 2 minutes to pour all of it in if you are going slowly enough so take your time.

Little trick about making any kinda mayonaise: take a small diameter tall vessel. And an immersion blender. You put in your eggs. Followed by some salt, maybe a pinch of sugar, some mustard if you wish. The acid of your choice: lemon or lime juice, port or sherry.... roughly minced garlic? (there is your aioli !) And then add all of your desired oil. (I lately used 70% canola and 30% peanut oil.) Put the blender to the bottom (with as less air as possible) and turn it on full speed. The blender will 1st mix what's on the bottom. Then suck in small amounts of the oil (which is floating on top). After some 30seconds you'll see the emulsion forming. Then you can slowly lift the blender until all of the oil is incorporated. Rule of thumb: 1 yolk will emulsify 100 to 200 ml of oil.
