This easy homemade kimchi noodle recipe mashes up Korean kimchi jjigae with Japanese udon noodles to make a bold and spicy yet comforting and delicious meal that's perfect for winter weather. In this video, I'll show you how to make an easy pork and kimchi udon noodle soup, including the pork and kimchi stir-fry and a soul-warming spicy broth.

7 grams garlic (1 large cloves, grated)
7 grams fresh ginger (grated)
1 tablespoon soy sauce
150 grams skinless pork belly (sliced thinly)
250 grams kimchi (include the juices)
2 cups water
1 tablespoon gochujang (Korean chili paste)
1 tablespoon gochugaru (Korean chili powder)
1/4 teaspoon salt (to taste)
70 grams garlic chives (or scallions)
2 servings udon noodles
2 eggs (soft boiled egg)

You stirred my memory, man. When you said, "Gochu garu, " it transported me back to my early 30s, when I was first trying to learn Korean. I remember repeating to myself, "Okay, 'gochu, ' is koshou, and, 'garu, ' is like gyaru, so it's, "hot (Korean) girl." haha

This type of soup is a heavenly weeknight meal for us... just the sort of thing I love! We always have so much kim chi on hand, we're looking for any excuse to throw it into a dish. That Minoware bowl is so pretty as well! Thanks for this great recipe Marc!

Got to plan ahead to make this today; thanks, Marc! I just finished eating it. There are a few things I MUST say:

The aroma and appearance of this soup set you up for a phenomenal dining experience, and it doesn't disappoint. Even with the fairly low-quality ingredients I had to work with, this soup came out shockingly delicious and nuanced.

The red ochre broth promises a fieriness but doesn't overplay the other elements of the dish; the kimchi's sour funk pulses underneath its red pepper notes. The kimchi also offers a crunchy bite, while the ingeniously marinated pork belly rises to the palate with a burst of ginger and garlic before being washed back by the tide of fiery broth. The udon noodles provide a cartoonish play of shape and texture, a leviathan-like swirl of tentacles lying just beyond reach. I really had to work to catch them up, which provided a comic break amid the intensity of the other elements.

It was an intensely pleasurable experience I look forward to repeating!

Things are fine here I watched your video excellent dude you know how I love kimchi so I'm definitely giving this a try I usually use a regular ramen noodles and put kimchi in it cuz I Fastenal my friends think I'm crazy dammit sister doesn't care for kimchi or sauerkraut or any kind of cabbage that's fermented she thinks I'm weird LOL 😆 anyways I hope you and your family are doing fine we're doing great out here so as always your friend in southern Nevada Nicholas take care
