LEARN HOW TO MAKE FATHEAD DOUGH & THE BEST KETO PIZZA
One of the most basic keto recipes you should learn how to make is Fathead Dough. In fact, just hearing the words Fat Head Pizza probably triggers mild drooling and hunger pangs in some people. It’s that good! Why is this keto pizza crust so good? Well... because it is made up of mostly fat - cheese to be precise. The combination of mozzarella and almond flour yield a dense, crispy pizza crust packed full of flavor.

Fathead pizza dough doesn’t take very long to prepare. The ingredient list is fairly short and you can be eating keto pizza in no time. It’s a perfect quick keto pizza option for busy weeknights or weekend movie nights. One of our family traditions is to make pizzas and watch videos on Friday nights with the boys. Each kid gets to add their own toppings to their own mini fat head pizza.

Besides pizza crust, the keto dough is actually a universal pastry dough in the keto community. We have used it as the breading for bagel dogs, breadsticks, hamburger buns, biscuits, cinnamon rolls, and crackers. I’m sure you could come up with a Fat Head Raspberry Strudel if you desired. Just be sure to omit the garlic powder and italian seasonings.

Because we love pizza and use the fat head dough for other low carb foods, we always double, triple….even quadruple the batch when we make it. The dough freezes nicely in a ball or you can roll in out into a thin crust first, flash freeze it, then wrap with plastic wrap for long term freezer storage.

Now that it’s easy to have a keto dough recipe at your disposal, there’s no excuse not to have pizza night at least once or twice a week on the ketogenic diet!

KETO FATHEAD DOUGH

10 oz mozzarella cheese
5 oz almond flour
1 egg
1 teaspoon baking powder

Makes enough for one large keto pizza with 8 slices. If you are making keto pizza, roll the dough out between two pieces of parchment paper until the dough is 1/4 inch thick. Poke holes in the dough with a fork. Precook in the oven at 400 degrees for 8 minutes. Remove from oven and add toppings. Cook again in the oven for 5-8 more minutes or until cheese is melted.

I have perfected your fat head dough for mini pizzas. I cut the dough in 8 circles and press in tortilla press to make circles. I freeze them immediately and take one out at a time. I cook it in the air fryer at 400 for 5 minutes on each side. I then add sauce, toppings and cheese of choice. Perfect individual pizza for one. Thank you for the recipe!

I can't quite put my finger on it, but something about this lady and the way she talks and the way she presents things is very relaxing and pleasant. Maybe it's her tone or something, i dunno, but it works.

My wife just uses almond flour, 2 eggs, little bit of butter & some a pizza crust. Works great.

To get a firmer crust, you can bake the crust at 375 for 8 minutes. Then add toppings and broil just until the cheese melts.

I used this dough to make tortillas tonight and it turned out fantastic. I used a small cookie scoop to get the right size. It came out to an even 10 tortillas. Then I flattened them with a tortilla press and baked them for 5 minutes. They were pliable and tasted great! Came out to 2.2 total carbs per tortilla! Thanks for the great recipe!! They were used for tacos that my whole family loved, but next I want to try making breakfast burritos with them.

I've found that if you toss the almond flour with the mozzarella before you melt it, then stir the eggs in you tend to get a more homogenous dough and it mixes together faster. I do it by hand and it always saves my arm.

This is by far the best dough recipe I've tried. It tastes the most like regular dough!
If you're using the metric system these are the measurements I used:
150g of almond flour
300g of mozzarella cheese

My husband went on the keto diet and actually went into ketosis rather quickly. He lost about 28 pounds! Unfortunately I love sweets and baking so I haven’t fully committed yet, but I will!
He actually went on the diet for diabetes and was able to come off his medication!

I made 6 gorditas that i baked for 25 minutes and then filled with ground beef. Added lettuce tomatoes cheese sour cream and salsa. Super good!

I love this recipe! But I use yeast instead of baking powder. This is such a good recipe that after making so many other recipes for fathead, I stick with this one because the proportions of each ingredient seem to be spot on in my opinion. And yes, it subs for any dough product you want to make, bread, rolls, pizza crust.. cheese biscuits, etc. I've even made "corn" bread by using half and half almond flour and almond meal that I ground myself to the consistency of cornmeal. The only thing I have not tried with this dough is 90-second bread. But I've made this recipe by throwing all the ingredients into a food processor (instead of putting the cheese in the microwave) and grinding them all up together. Turned out great! I don't think you can mess this recipe up.

I tried this but had to alter it a smidge because I only had 4.8oz of cheese so I added 2 oz of cream cheese to make it up. It was the best & easiest Keto dough. I made both pizza & mini cinnamon pecan rolls. Thank you 🙏🏽

Tried this recipe tonight and it tasted great. I made a mushroom, black olive pizza with white truffle oil. I think the next time, I will roll out my dough a little thinner though, so I can have a crispier crust. The edges were perfectly crispy and delicious. Once I rolled my dough, I put it in the oven for 5 minutes. I may increase to 8 or 10 minutes the next time and then add my sauce, toppings.

I would be tempted to replace the mozzarella cheese with suet (beef kidney fat) which was used in dough in Victorian times. In fact, English Christmas Pudding is still made with suet today! For those of us who have issues with dairy, it might be worth trying.

I have made lasagna using fathead dough for the pasta noodles, and I've even made a fathead spinach and pepperoni calzone!
