Homemade Turkish Lahmacun
Ingredients
4.5 cups flour
1 1/2 tsp dry yeast
1/4 cup olive oil
1 tbsp salt
1 tsp sugar
1 1/2 cup warm water (use controlled)
Topping (meat mix)
500 g fatty ground beef (or, as I prefer, lamb beef)
2 onions (medium size)
2 tomatoes
2 red peppers
2 green peppers
1/2 bunch of parsley
Salt, red pepper
1/2 tbsp paprika
2 cloves of garlic
1 tbsp tomato paste
1 tbsp pepper paste
2 tbsp olive oil
Instructions:
Prepare the dough with a soft consistency. Cover the dough with a clean kitchen towel or plastic wrap and let it rest for 15-20 mins. Then, punch it down (and knead it a little bit) to release the air from the dough. Do this process two or three times. Remember, this process is the secret to the soft and fluffy dough.
- Take the meat in a mixing bowl and add all the (finely chopped) vegetables. Add salt, pepper paste, and chopped parsley, and prepare a paste-like meat mixture that can be applied with a spoon.
- Next, prepare small tangerine-sized pieces from the dough and roll out each meringue to the size of a dinner plate.
-First, lightly grill them in a pan, and then bake at 500 degrees (or better broil) for 5-6 minutes. Serve hot.
