I'm a type 2 diabetic. I am not vegan or vegetarian, but I don't eat much red meat and mostly consume chicken and seafood. I also eat a ton of vegetables and try to have a meatless meal at least once a week. I am so glad I found you. You given me so many great ideas. I make enchiladas like this once a week, and it's a great way to use up leftovers! I save bits of beans, corn and potatoes, sweet or white, and just throw it all in there -- delicious! Have even smeared the tortilla with leftover mashed potatoes before adding the rest, and even that was amazing. I often pop one in the microwave for breakfast and eat it with a mango-avocado salsa, holds me 'til lunch.
