We discovered a Ball Blue Book tested recipe that includes bacon! These Louisiana Red Beans are fantastic and very easy to put together. We had some for supper with our air fryer chicken and finished a whole jar!

Boy, this is making my mouth water. I have leftover ham so I may do up some of these. I will need to buy a sausage though. This would be a perfect meal in a jar. I could make some rice and open up the jar and we would have a wonderful winter meal. Thanks for sharing!

You should put the chicken broth in with the beans/bacon/ham as you are heating up the beans, so the chicken flavor dissipates and the flavors meld. There is nothing worse than chicken flavored red beans.... LOL.

Also, a very wonderful Louisiana lady, and very good friend, always told me to use "Small Red Beans" rather than Kidney Beans, they just taste better. Though, she never canned There was never any left to can.

turn your towel over after each jar wipe you are smearing any grease contamination from jar to jar

So if you can us cured meat in these beans can it be used in cabbage, greens or other beans

Does anyone know if it’s safe to substitute a different bean for the kidney beans, or perhaps even a mix of beans? The quantity would remain the same.

What are less spicy sausage options for this recipe?
Some in my family love things to be HOT HOT HOT. I prefer just a bit of spice since food that hurts doesn't appeal to me. I've also got grand-littles who don't tolerate so much heat.
The high spice in many beans with rice recipes has always scared me away.

Can I use other kinds of beans for this recipe? I suddenly want to do all the beans I have. Although I admit I am asking g the question before reading the recipe.

Great recipe, but don't you think that it would be better to rehydrate beans in water and cook smocked ham bit in chicken broth (You'll need to heat it up anyway) so you will not loose the smoky flavour of the meat.
