Dhaba/Restaurant Style Khichdi

The Tadka/ Tempering is the game changer for this recipe. It alleviates your boring Khichdi to a tadkadar dhuadar khichdi 😄😄

Ingredients
1 Cup Soaked Rice
1 Cup Masoor Dal
3& 1/2 Cups Water
1 Tsp Salt
1 Tsp Turmeric Powder

1 Tbsp Oil
1 Tsp Asafoetida ( Hing)
1 Bay Leaf
1 Tbsp Cumin Seeds
2_3 Green Chillies
1 Big Onion Chopped
1 Tbsp Chopped Garlic
1 Inch Grated Ginger/ Ginger Paste
1/2 Tomato Chopped
1/2 Tsp Turmeric Powder
1 Tsp Red Chilli Powder
1 Tsp Coriander Powder
1 Tsp Cumin Powder
1 Tsp Garam Masala Powder
1 Tbsp Kasuri Methi
1 Tbsp Chopped Coriander Leaves

For tempering
1 Tbsp Ghee
1/2 Tbsp Cumin Seeds
1 Red Dry Chilli
1/2 Tsp Red Chilli Powder

Ingredients
Mix rice, dal, water, salt and turmeric powder in a pressure cooker and cook upto 4 whistles on low flame.

Heat Oil in a Pan, add in cumin seeds, hing and bay leaf.
Thereafter add green chillies, garlic and onion . Cook until the onion is 80 percent cooked. Then add ginger paste and cook for another minute.
Next add tomatoes and cook until the tomatoes are mushy.
Next add in all the spices. Followed by kasuri methi.

Open the pressure cooker and mash the dal rice with a masher. Adjust water. It should be runny consistency.

Add the mashed dal rice to the cooked masala mixture . Mix everything well so that it is well combined.

Finish off with some chopped coriander leaves and mix everything well.

For tempering heat ghee in a Pan . Add in cumin seeds and red dry chilli.

Turn the heat off and add red chilli powder.

Quickly pour this over your prepared Khichdi.

Serve Immediately.

The ghee tempering alleviates your Khichdi. But ensure not to burn the red chilli powder. So pour the red chilli powder after removing from heat.
