This popular snack is commonly found as street food or as an appetizer in many Thai restaurants. Compared to most Western fish cake recipes, Thai fish cakes are very flavorful and are not battered which allows for more of the taste of the fish, spices, and herbs to come through. These cakes are best eaten shortly after frying when they're still hot and juicy. Serve them with or without rice, accompanied by Thai sweet chili sauce, chopped cucumber, fresh cilantro, and a squeeze of lime juice. Simply delicious!

I recommend that immediately after frying you allow the cakes to rest for a few minutes on a paper towel to remove excess cooking oil.
