Honey Mustard Oat Crusted Salmon

2 tsp fresh thyme, chopped (10 ml)
1/4 tsp salt (1 ml)
2 tsp olive oil (10 ml)
1/4 cup grainy Dijon mustard (60 ml)
2 Tbsp honey, warmed slightly to liquify (30 ml)
4 skinless salmon fillets (about 6 oz each)
Sea salt and freshly ground pepper, to taste
Canola or olive oil cooking spray
