Strawberry Yogurt Streusel Muffins
INGREDIENTS
2 large eggs at room temperature
1 teaspoon (5mL) vanilla extract
¼ cup (60mL) melted salted butter
⅓ cup (85g) plain Greek yogurt
1 cup (100g) blanched almond flour
3 tablespoons (21g) coconut flour
¼ cup (50g) granulated erythritol or more
2 teaspoons (8g) baking powder
½ cup (70g) chopped strawberries

¼ cup (25g) blanched almond flour
1 tablespoon (7g) coconut flour
2 tablespoons (25g) granulated erythritol
¼ teaspoon (1g) cinnamon powder
2 tablespoons (30g) melted salted butter

3 tablespoons (38g) powdered erythritol (optional)
2-3 tablespoons (45mL) heavy whipping cream (optional)

Bake at 330°F (166°C) for 20-30 minutes or until toothpick is clean when inserted.

Yields 8 muffins (macros per muffin)
