I recommend you sealing the drywall with Gardz. its water based, low odor. The specs say let dry overnight but that's if you completely flood the material on. I normally use a blow dryer and speed dry the Gardz in a minute or less. besides that "good job"

I’m intimidated by the challenge of mixing mud (and by the potential mess I would make); is spackle an ok alternative?

That could literally have been done with one coat of filler
