Bonet Piemontese: Italian Amaretti & Chocolate Flan

Possibly the best custard dessert of all time (IMO), the bonet piemontese is a sort of chocolate flan with a crust of soft amaretti cookies. It's a traditional Northern Italian dessert, obviously influenced by France as Piedmont's right on the border.

Think of it as a hot cousin to flan, infused with cocoa powder, rum, cinnamon and vanilla. The best part, and what makes it distinctly Italian to me, is the inclusion of crushed amaretti cookies in the custard batter, which sink to the bottom of the custard as it cooks, turning into a sort of sort, pudding-cake like crust.

I make it in ramekins here, but it's traditionally made in a larger mold. Full recipe is on my website, link at the top of the video description.

Bullnettle kernels or purged and toasted acorns or hickory nuts would be good too
