1 - Not everyone in places like the UK were living in castles, most would’ve lived in small houses made from wood.

2 - different ways of life have different needs. These houses look pretty airy which is likely to be used to deal with the warm climate. And many other uses.

Building of castles involved the death of hundreds of people, families not compensated and still forced to serve their lord, once built, castleswere not comfortable, but cold hard, stinky, filled with stagnant air. I love the Ren Fest, but I'm glad I didn't have to live during the actual Renaissance period in Europe.
