To the folk asking about the language... It isn't in any language. It's a traditional Irish way of calling sheep. Each herding family has its own distinct song they use to lead their flocks. It's interesting to watch the old-timers go into a sea of sheep owned by different families, and then they start singing this sort of nonsensical song and the sheep of the different families separate and go after their shepherds. The sheep know who to follow based on the song, and this helps prevent thefts as well as pasture mix-ups. You can see another example of this in The Beggarman as performed by The High Kings. It often finds its way into folk music.

In another video Steve explains during a concert that this is 'mouth music'. When the christians came to destroy the 'pagan' cultures, they destroyed instruments, so they needed to use their mouths to create music. That's how the man himself explained it.
