Just made this yesterday! Though I had to use coconut oil, and I was afraid it'd mess up the texture. But I'm happy to report that after spending the night in the fridge, the texture is still great.

Though it was kind of bitter the next day, I suspect the seeds might be behind that. Next time I'll try removing those. And obviously a bunch of different peppers!

Does this work only because of garlic though? Like aioli is an emulsification of oil and garlic, garlic being the emulsifier.

Try this Boil 5 green husk tomatoes, halph calabacita squash, garlick. Fry a jalapeño. Blend it all up (add salt). Boom🙏

I am making this tonight. I don't have any avocado oil, so I'm using extra virgin olive oil.

Aquafaba is a good substitute for any oil, if you need to avoid oils or want to use something without that fat content. Other options could be vegetable broth with a bit of corn starch, or even potato flakes, just enough to thicken the sauce, or cooked potatoes would do the same.
