Phosphate Angostura Cocktail From 1904
Welcome back to the kitchen, friends! Today on Cocktails After Dark, we're diving into a vintage cocktail recipe from the 1904 book, "Drinks as They Are Mixed." This tiny book was designed to fit in a bartender's vest pocket and has an old phone book style for easy navigation.

Tonight, we're making a non-alcoholic drink called Phosphate Angura, perfect for those who need to stay sober (like me, since I'm piloting an aircraft tomorrow!). This drink features acid phosphate, a common ingredient in late 1800s cocktails and sodas, combined with Angostura bitters and Fee Brothers bitters for a fun comparison.

Here's the recipe:
Phosphate Angostura.
Use thin, medium bar glass.
Angostura bitters, teaspoonful.
Lemon syrup, 3 dashes.
Seltzer; fill up glass.
Serve.

Just because it keeps coming up - Yes Ango (and most bitters) are 45% alcohol, but in the amount used, the total ABV of this cocktail is well below what is considered an alcoholic drink here in Canada. Less alcohol than a bottle of commercially available Kombucha.

Sounds like lemon-lime and bitters, which is such a popular drink in Australia that Angostura actually bottles it. I love it. They use lemon-lime pop, though.

I've been making this drink for years. I tried it with Peychaud's bitters a couple of times, but I definitely prefer it with the Angostura. I'll have to give it a try with some other bitters at some point.

Sounds very interesting. I can’t believe I have all the ingredients and just need to make the simple syrup. I think I’m going to try multiple variations with different bitters and simple syrups. ❤

Found on r/cocktails a recipe for Acid Phosphate

15.6 grams Calcium Carbonate (Chalk)

15.6 grams Magnesium Carbonate

15.6 grams Potassium Bicarbonate

118.3 ml (4 fl. oz. or 1/2 cup) Phosphoric Acid 85% USP

Water to make 946.35 ml (32 ounces or 4 cups)

Mix the acid with enough water to make 473 ml. (16 fl. oz. or 2 cups) and add the chalk gradually and with constant stirring. When the effervescence has ceased, add the Magnesium Carbonate in the same way, then the Potassium Bicarbonate, Finally, add the remainder of the water to make 946.35 ml (32 ounces or 4 cups) total volume, stir well, and filter.
