Soup Season is back! We're starting off with potato soup, an crowdpleaser soup recipe to keep you warm this winter. The secret to my easy potato soup recipe: More potato, in the form of potato chips 🤫

🥔 Potato Soup Recipe
2 Tbsp olive oil
1 large onion, diced
3 cloves garlic, sliced
roughly 200g of (smoky) sausage or bacon
3-4 medium mealy potatoes, grated
3 medium waxy potatoes, cubed
few sprigs of thyme
1-2 tsp SmoPa™ or smoked paprika :)
1,5l water or stock
1-2 handfuls frozen spinach (optional)
1 handful frozen peas (optional)
1 handful frozen carrots (optional)
another 100g-150g sausage towards the end
1 large clove of garlic, grated, towards the end
