Resep Bihun Goreng Putih (untuk 4-5 porsi)
Bahan:
250 gr bihun kering
3 lembar kol
2 buah cabai merah
3 batang seledri
1 batang daun bawang
6 pcs bakso
3 butir telur
Bahan lainnya:
2 sdm minyak untuk menumis telur
2 sdm minyak untuk menumis bumbu halus
½ sdt garam
2 sdt gula pasir
½ sdt lada putih
1 sdt kaldu jamur / penyedap
1 sdm kecap ikan
Bahan bumbu halus:
5 siung bawang putih
7 Siung bawang merah
4 butir kemiri
½ sdm ebi
½ sdt garam
Bahan sambal:
35 gr cabai rawit hijau
2 siung bawang putih
1 buah jeruk nipis
50 ml air dingin
½ sdt garam
2 sdt gula pasir
Langkah:
1. Rendam bihun dengan air dingin lalu rendam ebi dengan air panas, diamkan selama 10 menit
2. Iris kol, cabai merah, daun bawang, seledri, dan bakso
3. Siapkan ulekan, masukkan bawang putih, bawang merah, kemiri, ebi, dan garam, ulek hingga halus
4. Rebus cabai rawit hijau dan bawang putih hingga matang lalu masukkan ke dalam blender. Tambahkan air dingin, blender hingga halus
5. Pindahkan ke dalam mangkuk lalu tambahkan perasan jeruk nipis, garam, dan gula pasir, aduk rata
6. Panaskan minyak, orak arik telur hingga matang, sisihkan
7. Panaskan kembali minyak, tumis bumbu halus di api sedang kecil hingga wangi dan matang
8. Besarkan api, masukkan bakso, tumis sesaat kemudian masukkan kol, cabai merah, daun bawang, seledri, kecap ikan, bihun, dan telur orak arik, tumis sesaat
9. Tambahkan garam, gula pasir, lada putih, dan kaldu jamur, aduk rata
10. Bihun goreng putih siap disajikan

White Fried Vermicelli Recipe (yield 4-5 servings)
Ingredients:
250 g dried vermicelli
3 pc cabbage
2 pc red chili
3 pc celery
1 pc green onion
6 pc meatball
3 pc egg
Others:
2 tbsp oil to fry the eggs
2 tbsp oil to sauté the spices
½ tsp salt
2 tsp sugar
½ tsp white pepper
1 tsp mushroom powder / MSG
1 tbsp fish sauce
Spices:
5 clove garlic
7 pc shallot
4 pc candlenut
½ tbsp dried shrimp
½ tsp salt
Sambal ingredients:
35 g green Thai chili
2 clove garlic
1 pc lime
50 ml cold water
½ tsp salt
2 tsp sugar
Steps:
1. Soak the vermicelli in cold water. Soak the dried shrimp in hot water. Let them soak for 10 minutes.
2. Slice the cabbage, red chili, green onions, celery, and meatball.s
3. In a stone bowl, mash the garlic, shallots, candlenuts, dried shrimp, and salt until smooth.
4. Boil the green Thai chili and garlic until cooked. Blend until smooth with cold water.
5. Transfer the Sambal into a bowl, then add lime juice, salt, and sugar. Mix well.
6. Heat the oil and scramble the eggs until cooked. Set aside.
7. Add more oil, then sauté the blended spices on medium-low heat until fragrant and cooked.
8. Turn the heat up, then add the meatballs. Cook for a moment, then add cabbage, red chili, green onions, celery, fish sauce, vermicelli, and scrambled egg. Cook for a moment.
9. Season with salt, sugar, white pepper, and mushroom powder. Stir well.
10. White Fried Vermicelli is ready to serve.
