I think people are really overthinking. Zoro said that because he didn't watch a single time that Mihawk showed any emotion especially fear (as that time S-hawk showed fear). As fear is very close associated with excitement, Mihawk is currently waiting for a strongest swordman to better appear again so that he can get back the feeling of fear and excitement. That's all

You got this one wrong Zoro meant that the mihawk seraphim has more humanity in him than the other seraphim and this is shown in the manga because the mihawk seraphim actual has a facial reaction to this compared to the other seraphim which probably would not
