Great video and incredible condiment, just note that “olive” in this connotation is the Chinese Olive (Canarium album) which has no relation to the Olea genus of olives we think of in the West!

For anyone who doesn’t like the briny flavor of most olives, try Castelvetrano olives. They’re great for people who hate olives because they have a whole different buttery approachable flavor with less brine and a meaty texture

its great in compound butters. shallot, ginger, and garlic all turned into a paste with the olive. can also add hot peppers or chili crisp.

We have something similar in the Mediterranean/Turkish kitchen -- tapenade or olive paste (zeytin esmesi in Turkish)

Have you ever heard of Black Lemon? We use it here in Saudi Arabia to garnish Jareesh (similar to congee, but with Burgul, which is kind of wheat)

This stuff. Its goddamn incredible. No joke, ive had times where ive mixed a spoonful into rice and been happy just eating that on its own as a meal. Game changer seriously

One of my favourite ways to use it is with pork belly that has been chopped up into small strips, fried until very crispy and stirfried with some of that delicious goodness. Absolutely amazing.

Omg...I LOVE that stuff. I never even knew what it was called, only that the lady that runs/owns the little Asian market in my town told me to try it once, and I've just kept repurchasing it ever since. It's so savory and delicious, and my favorite way to eat it is putting a little bit on some fresh, hot jasmine rice.

橄榄菜 is so good I remember when I headed off to the UK for studying my aunt stuffed a jar into my luggage it was so sweet of her... I love the taste of home :(
