If I'm not mistaken, Ian Flynn stated that the Timeline slowly went back to normal with time, so, Sonic and Friends don't remember most of the Stuff that they did when interacting with their versions from the future, which would explain why they don't already know most Characters even before meeting them, such as Chaos, Shadow, Silver, Cream...

I have a theory, Eggman knows what the ruby is, it’s just that he found his old prototype & forgot about it but the prototype is from the past & not the future which is the one infinite used, & the real one is the prototype Eggman had all along

-Events of mania take place.
-ending of mania yeet phantom ruby and sonic into the future.
-phantom ruby ends up in the desert while sonic ends up with Tails.
-modern Eggman finds the phantom ruby.
-the events of forces take place
-classic sonic gets sent back to his time.
-events of sonic mania plus ensue.

This is how things actually happened.
The main issue I have is: how did the phantom ruby return to the past for the events of mania plus?

As for why modern Eggman doesn't already know of the phantom ruby, I'm assuming it's the same reason I use for why classic sonic doesn't already know the events of generations: time anomalies exist outside the timeline so the events of gens simultaneously affects sonic in the future and past so theyre both experiencing it at the same time. Same for the phantom rubys shenanigans... time travel is annoying.

No because Mania is part of a different timeline. The modern cast never experienced Mania, otherwise Sonic would have been prepared for Infinite.

Maybe my head canon is that he suddenly forgot about it in Forces because he was so busy on trying to destroy Sonic.

It kind of makes sense though. At the Mania. The Ruby and Sonic gets pulled into the portal leading to the modern era. These timeliness still remember the last time they clashed. Now, we don't really get a clear indication of the time between classic sonic coming home and going to Angel Island where classic eggman found the Ruby and the end of Generations where sonic came back compared to where Modern Sonic had his adventures until Forces. It could be very likely that Classic Eggman was looking for the emeralds around Angel island, maybe even trying to dig to palace zone for the master Emerald and found energy signatures which was more powerful, The Phantom Ruby. Of course when they got pulled into the portal, Modern Eggman had never seen this Ruby before because this goes off the original timeline and not Classic Sonics new timeline which explains why the modern cast had never seen it before.
