Pumpkin Squash Ravioli - with crispy Sage and Brown Butter

Butternut Squash Ravioli 🍃 Sage leaves, crispy prosciutto, walnuts and brown butter. Smoked garlic that I roasted with the squash, fresh pasta and caramelized pumpkin.

The ravioli was filled with roasted squash and mascarpone, salt and roasted smoked garlic. Extra texture and crunch work the crispy prosciutto. Traditional flavors and a little left over squid ink pasta that I made into a beautiful pattern for the pasta. Perfect starter dish 🧡 for my sage lover 🍃
