Tip from someone who worked in a American-Mexican restaurant, after coating in cereal (different cereals will work to we used Cinnamon Toast Crunch) freeze them some more. They will still fry up great and the colder the base the less it melts.

I used to and still put those honey nut cornflakes into my vanilla icecream or any icecream cuz my mum told me she used to do it too and honestly it was and still is the best topping I’ve had with ice cream.
