Ingredients:

Xacuti Paste:
2 dried red chillies, dry roasted till aromatic
1 tablespoon aniseed (moti saunf), dry roasted till aromatic
1 piece cinnamon, 2-inches in length, dry roasted till aromatic
12 black peppercorns, dry roasted till aromatic
2 teaspoons turmeric powder
1 teaspoon cumin seeds, dry roasted till aromatic
1 teaspoon coriander seeds, dry roasted till aromatic
1 teaspoon black mustard seeds, dry roasted till aromatic
1 teaspoon poppy seeds (khus khus), dry roasted till aromatic
¾ teaspoon ginger paste
¼ coconut, grated (to make about ½ cup) and roasted till light golden in colour

2 tablespoons vegetable oil
200 grams onion (about 2 medium onions), finely sliced
5 cloves garlic, finely sliced
1 kilogram chicken, skin removed, cut into 8 pieces
1½ teaspoons salt or to taste
1½ cups thin coconut milk, 2nd press (about 375 ml)
1 tablespoon tamarind paste

6 cloves
6 green cardamoms
1 tablespoon vinegar, preferably toddy vinegar or coconut vinegar
1¼ cup thick coconut milk, 1st press (about 310 ml)
1 tablespoon coconut juliennes to garnish
