Thank you for the video! This is way out of my typical cooking comfort zone and I was having trouble visualizing the recipe from the written version alone. Still not sure if I'm going to make this but you've definitely made the decision a little easier.

Finally cooked this up yesterday, using all the original ingredients following Kaitlin's latest recipe on your website and including 郫縣豆瓣! It was so delicious and reminded me of the numbing spiciness I had once tasted at an authentic Sichuan restaurant in mainland China before. I will be sure to cook it again!

I just made this tonight and it was amazing. I only wonder how you can stand the burning lungs from the toasting peppers part, It hit my wife and I hard this time when I added the sichuan dried chilis and the thai chili to my wok we started coughing from the fumes lol. I can eat the heat but breathing in the napalm fumes was the hard part.

...hm...this is something like the "America's Test Kitchen" version. but though I like the Woks of Life - and this version - and i've tried both the ATK and WOL versions - i MUCH prefer marnie henricksson's mapo tofu in her slim "easy asian, " which uses dried shitake's and "black beans" (fermented soy beans)...'fraid you'll have to track this one down in book form if you want to check out my vote - since i don't see an online version of it...
