Here’s the thing about louisianese people: different recipes on different STREETS IN THE SAME PARISH. They’ll all argue saying it’s best. Just walk around and sample and tell that cook it’s the best

Im a chef in New Orleans, been cooking crawfish since I was 12 or so haha, that little layer steam trick, ALOT of high end restaurants do this for the slow steam method.

Round of applause for this dude just sticking to the way he does it. I’ve never boiled crawfish, but I think you make it how you want to make it. There isn’t a right or wrong way to do it, it’s literally just how you would want to do it. Don’t listen to hate comments, they’re talking to hear their own voice. If you think about it, putting the seasoning in the cooler is the same thing as letting them soak in the pot. Except that it's super concentrated in the cooler since you have less water diluting it 🤔
