Cooking fruit into a compote is easier for digestion, and the syrup infuses in your overnight oats for the best breakfast!

Ingredients:
2 cups chopped strawberries, 3 tbsp maple syrup, ½ lemon juiced and zested
2 cups chopped peaches (skin removed), 3 tbsp maple syrup, ½ lemon juiced and zested

1 cup old-fashioned rolled oats, 1 ½ cups non-dairy milk (we used almond milk)

First:
in a small pot, make the compote by cooking all three ingredients for 5-7 minutes.
Next:
in a small bowl, make the overnight oats by mixing the oats and non-diary milk.
Last:
divide the overnight oats between two small bowls and either layer the compote or add it on top. it keeps in the fridge for 3-5 days!

I'm not a sweets guy, but I have raspberries and strawberries growing like crazy. I love steel cut oats to make for the week.
