Seeking milder climates this winter, I find myself in Arizona among the gorgeous Superstition Mountains. My camp is within the Lost Dutchman State Park. The mountain views are EPIC! I do a beautiful hike, then back at camp...I make an enchilada casserole in my camp oven. Join me!

The green enchilada sauce is all we use.
Take your left over enchilada and put it on a layer of refried beans then put a fried egg on top. Add more green sauce, parmesan cheese and some green onion. Poor man’s uvouse rancheros

I noticed you don't have a wedding ring. Could you share a little bit of your personal life like do you get lonely travelling sometimes? Do you have kids that are grown up but maybe one day you'll go camping with in future videos? Do you conceal carry for protection being that you're a single woman out there in the wilderness ?
