We don't believe in science like you say. We including you rely on it in everyday, to have electricity, water, food, medicine, mobile, internet, almost everything you can think of.
Unlike religion, science is not static, we always learn new things and improve on what we already know.

Science changes. Let's use Mario example. If u play the game & u see an obstacle and a safe land u jump u land on the safe ground. Now imagine the land is science, so it changing places all the time, would u dare jump, because u see it here jump & it's not there anymore, that's the analogy of science. It gives u some workable models but u won't risk everything & jump on an obstacle based on that.

Let’s say someone believed in a theory in science that was applicable to a lot of things
And that person ended up dying
Then after he dies, that theory gets proven wrong
In that situation, it would mean someone could’ve been wrong for their whole life

what kind of argument is this? Science doesn't "change", it is reviewed continuously based on new experiments and technologies. Many theories have been made before it was possible to prove them empirically and were only demonstrated in the future, many others had to be adjusted. It is not a perfect process, but it's consistent and it works.

it's good that science changes. Humanity is about change, always attempting to increase our understanding of the world around us, unlike religion, where one prays upon eternally unchanging baseless fictional concepts despite thousands of years of human civilization. Ludicrous.

The dude doesn't understand that science is not a belief, you don't believe in science. You might believe that a theory is correct but in science, you make a prediction or come to a conclusion and it either gives an according result or is incorrect. There is no question of just believing in something in science because your point and the only option is not to get an idea that satisfies you but to get a result and only then consider it undeniable.

I put “faith” into something fallible that changes because practical applications like engineering, medicine, computation, transport etc etc are far better than in past when our understanding of them was even poorer than now.

Guy doesn't seem to get your point. Science may be pretty concrete and extremely useful when it comes to all the technology we've created because of it, but to have a whole worldview on the nature of reality and existence in the universe based on science is folly since science is always changing and because science has absolutely no idea how anything could exist to begin with. Science can look at things that already exist, but it cannot tell you how matter, the universe came into existence to begin with and what the purpose of everything is; not even close. Science can only look inside the fishbowl, not on the outside. It's only good inside the fishbowl.
