I feel like with enough time Merlin would have a chance considering she can cast pretty much any spell and has knowledge of all demon race spells and secret arts. Not only that but she has her “enchant infinity” which makes spells rise to their ultimate potential, but I’d say the fight is determined by how quickly the other one is to realize the situation because Merlin also has known meliodas for almost her entire existence so she knows his fighting style and abilities. (I mean she has knowledge of all demon race spells, knows meliodas personally and his fighting style, her enchant infinity, she can stop time, seal peoples magic, has the perfect cube which when she used it against assault mode meliodas was very comfortable with it being able to contain him.)
